Basil Herb Bread, A Recipe Review
I have a fancy Zojirushi bread machine that I’ve been wanting to use more. It came with a cookbook of recipes specifically for the machine and for some reason I rarely used it but I dusted it off and have been making lots of bread!
Mostly I’ve been making a whole wheat bread (I somehow had two bags of whole wheat flour, I needed to use that up) but I’ve switched over to the French Bread section and one of the recipes was for this herb bread with basil. I actually doubled the basil in the recipe and it is still a VERY subtle flavor in the bread. When I make this one again I’m going to add a bit more basil and throw some garlic in it too.
The biggest changes I’ve had to make to many of these Zujiroshi recipes is just the dairy. I can’t consume milk or milk products and that can make baking difficult at times but there are some very good butter replacements (shout out to Earth Balance Butter) and I’ve also found a wonderful coconut milk powder for the dry milk needs for these breads that does not make the bread taste like coconut at all. So thumbs up!
